Scale Fears
I was really not looking forward to weighing in this week. After last weeks gain I have developed a fear of scales. Well maybe not so much a fear of scales, but rather a fear of facing the current weeks weight gain. If I gained last week then I mist have gained this week because I did not make it to they gym at all this week. School started and I am giving myself two weeks to focus on school and my eating habits and I hope to make it back to the gym shortly. There is no way I lost this week because my food choices have slipped and some of my classes are right at noon so I have to eat at times that I am not used to eating. I need to make sure I take snacks with me for sure.

Weight gain happened this week
I was so excited because my weight was going down and I was doing what I should be doing. I really tried hard. This week I even made it to the gym again four times this week. I was looking forward to another loss this week, but I got on the scale this morning and it said I gained 2 lbs!! I am so discouraged, now for this 10pound challenge I have to loose 9 pounds in the next three weeks not 7!!!
This is where I get discouraged and just go back to my "I'm supposed to be fat thinking" and over the next few weeks just give up on everything. This is not what I need right now especially since Spring Semester starts on Monday and I am already stressed about how I will have the time to keep on working out, with everything else I have to do and added homework for 15 credit hours. I also need to keep my GPA up in order to get the transfer scholarship to Weber State for the fall. My current GPA is 3.98 and I need to keep my GPA above 3.9 to qualify for the scholarship. Uggg, life sucks sometimes when you are trying to do good. Well, back to watching what I eat like a hawk.

Donuts and Chocolate
Why must you torture me so? I was doing so good and I ate really well today. Family left some donuts from Dunkin Donuts here with the notion that they were a free for all. I did really good until this afternoon. That box of donuts was shouting, "EAT ME!! YOU KNOW YOU WANT TO!! EAT ME NOW!!!" I tried super hard to ignore it but every time I entered the kitchen there was the box screaming at me. Finally I decided to have one. I mean, just a plain glazed donut was no big deal. Right? Well apparently it is a huge deal when you haven't been eating sugar or white flour like that in a long time.
It made me feel gross and lethargic. Those were feelings that I haven't really felt in a long time. Not to mention that I was already feeling under the weather from some extremely fun outdoor activities yesterday with my boyfriend. Go Karting. They even let my group go like 3 times as long because it was super cold out and there was no line. In the end my fingers were so cold they hurt. I honestly thought they would never warm up. A friendly game of Lazar tag later and they felt warm. Then we talked outside for like an hour, big mistake. My boyfriend is even sick today, and he is not one that usually gets sick very easy.
Anyways... back to my original point... I have learned the value in eating the right things to fuel my body and after today I am not sure how I even survived on the food I was eating before. I suppose because I did not know any other way. I tried to make up for my downfalls in eating the donut with a big salad for dinner. I was still craving sugar though and the leftover Christmas candy was there. I ate 9 Hershey's Kisses. I know its only nine, but in the grand scheme of things I don't think I would have eaten them, or that quantity, if I had not caved to the afternoon donut. Oh well, rant over. Tomorrow is a new day and better choices will be made. It's a good thing my family finished off the box of donuts this evening. They wont be calling my name tomorrow.

Happy New Year!
This year is going to be different. I am different! I will be a healthier me. I got this! I thought I would start this New Year off right with my new favorite breakfast. My Healthy Scramble with half a banana, toast, water, and plenty of hot sauce. I found a new love for all things hot sauce after staying at Fitness Ridge. This has become my go to breakfast. It would also be good with a slice of turkey bacon, onions, and red peppers. The bread is Jack Spratt's Sprouted Wheat Bread that is made right here in Utah and it is delicious! One teaspoon of butter is spread on the toast.
3-4 raw washed Mushrooms
1 large Egg
3 tablespoons 100% Egg White
1 teaspoon Extra Virgin Olive Oil or Grapeseed Oil
1 tablespoon Feta Cheese
Put oil in small pan over medium heat. Chop the Spinach and Mushrooms to the size you like. Add to the pan and cook until the Spinach is wilted and the Mushrooms are cooked. Beat the egg and add the egg whites to a dish. Beat with a fork until blended. Add egg mixture to the pan and once the eggs are almost cooked add the feta and continue cooking until done. Top with hot sauce of your choice.

Sunday After Christmas Weigh In
I am so incredibly proud of myself. I went grocery shopping when I got to my Dad's house (since I am staying there through the holidays) and got some things to help me achieve my food goals. I did not make it to the gym this week, but my Dad have some gym equipment I used and I took my dog for walks. I think I did well this past week, even though Christmas got the best of me. But I am not hung up on my missteps now as I would have been before. I would have gave up and decided that this was too hard. Christmas is only one day and if I wanted a piece of chocolate then I was going to indulge. The next day I got back on the horse and started over. I weighed myself today in the middle of the day after breakfast no less and the scale still showed a loss. I weighed in at 287.3 which is a 1.9 pound loss since last Sunday at Fitness Ridge. Nutrition really does have a huge impact on weight loss. I am still focusing on my food choices. Limiting the table sugar, and white flour and not eating simple carbohydrates or fruit after lunch time. It has been a struggle because my Dad's wife makes incredible food and I really have to watch my portion sizes. I just add extra vegetables at dinner if i need to or am feeling especially hungry. I have not consumed anything besides water, herbal tea, almond milk and eggnog (it is Christmas after all) to drink since I have been back. I have noticed my energy level skyrocket and I have been going to bed at a decent time and waking up earlier. I have been feeling amazing. I plan to take this week to keep focusing on my food since Spring Semester starts on January 13 and I need to be ready for that. Next week I will be adding in gym time while my son is at school and I plan to got 3-5 days a week. If I miss a day I will not beat myself up about it. I will just restart the next day. Life happens but I still got this!

Weigh in Sunday at Fitness Ridge
I'm so excited! I just can't hide it! I weighed in at 289.2!! I lost some this week and I am so proud of myself. I lost a total of 4 inches and 3.3 pounds. I know, I know, its not that big of a loss. A loss is still a loss nonetheless. I lost in inches, body fat percentage, and weight. I gained myself, that's the biggest gain of all. I am packing up my stuff and getting ready for the 4.5 hour drive back to the Salt Lake Valley. I am sad to leave, but remain determined and optimistic of the future. I am not the person I was when I arrived. I found myself. I found the person I was meant to be and I will change my life. I got this! Bring it on Christmas, I dare you!
